I just had a BMW – Big Mom Win! We made cookies before lunch!
I just took 30 minutes out of my morning to make cookies with the kids. I’m sure some of you do this regularly, but not me. I’m tucked away in my office trying to work, pretty much all day long. So it’s nice to come out of my “hole” and do something with the kids, other than to change a diaper, make lunch, or open a bag of fruit snacks!
And they loved it!
Not only did we make cookies – I made them my “healthy” way! I used applesauce in place of the butter. I’ve never done this with cookies before – usually just brownies. So I wasn’t sure what to expect. They definitely came out a little more like cake, and less “full fat” flavor. And they look a little different – definitely not like the picture on the package! But my kids don’t know how they should look or taste! And they loved them!
Now I’m back at my computer working. Well, after I’m done writing this I will be working! But I feel refreshed and ready to focus again.
I’m reading a new book about 6-figure bloggers and the difference between them and hobby bloggers. I’m actually reading an advanced copy so I’m sure I’ll have more to say when I’m done. But I’m getting this feeling that I need to plan more in my day than just working. Like this special time with my kiddos. I think it’s good for all of us. I actually feel like I accomplished something!
Cookie Recipe
I used a Betty Crocker chocolate chip cookie mix that I had in the pantry.
The mix called for 1 egg and 1 stick (1/2 cup) butter. I made an even exchange, 1/2 cup unsweetened applesauce instead of the butter. You just mix it and bake per the instructions.
I’ve used yogurt before too. I’ll try that next time!
I’ve also used this exchange in gluten free mixes and I use the same exchange ratio.
